The region's climate and environment create conditions that can help reduce stress on the animal, while natural grass grazing plays an important role in how these cattle are raised.

Once the product reaches our facility, proper handling and food safety become the priority.

USDA Federally Inspected Suppliers Our suppliers operate under USDA federal inspection and a HACCP (Hazard Analysis Critical Control Point) plan.
SQF Certified Our facility is SQF (Safe Quality Food) certified and undergoes bi-annual SQF audits to ensure our safety measures remain verified.
Food Safety Procedures Primals undergo our established primary food safety procedures for handling and processing. Additional measures include secondary intervention SANOVA, which reduces the pathogens Ecoli and Salmonella below detectable levels.
Temperature Control Proper temperatures are maintained throughout handling, and all products are flash frozen under consistent sub-zero temperatures to ensure quality and tenderness preservation.

Aging & Preparation

Time Makes A Difference.

Aging is an important part of developing the flavor and tenderness you expect from high-quality beef.

21 Day Aging Our primals are processed following a 21 day age. Beef only tenderizes for the first 10-14 days, and providing it the additional time reinforces that bold, rich flavor you expect.
Center Cut and Extra-Trimmed Our steaks are center-cut and extra trimmed, providing an even shape, for a uniform cook.
Consistent Year-Round Our quality sourcing and aging technique allows for us to provide a consistent flavor profile, no matter the circumstance.
Hand-Cut Our steaks are hand-cut within half an ounce by our trained butchers on-site.

Packaging

Prepared For The Journey.

The final step is making sure the product is packaged properly for frozen storage and delivery.

Flash-Frozen & Freezer Ready Our steaks are flash frozen under sub-zero temperatures to preserve quality, flavor, and tenderness. They may remain frozen in the original packaging for a year or more. Thaw under refridgeration and enjoy when ready.
Insulated Packaging All orders are oacked in an insulated cooler, surrounded with 2lb frozen ice packs to ensure quality condition upon arrival.
Direct To You All orders are delivered in 1-3 business days after the chosen shipping date.
Our Promise Our steaks are cut fresh and flash frozen. As long as your order arrives cold to the touch and the ice packs remain frozen, it's completely safe and ready to go in the freezer. If this is not the case, please reach out to us within 24 hours and we will be sure to make it right.
