Different Grades.
One Melotte Standard.

We source our beef from a small number of trusted programs and locations, all within the Great Plains. Every grade we offer has has to meet a standard we believe in before it reaches our customers.

Quality At Its Finest Value.

Our Black Angus Select has been our most popular offering for decades.
Why? We don't source from all over. We source it from the same cattle, in the same Great Plains region to ensure consistency. It contains all of the same genetics as our higher-marbling Angus, the difference is simply that it did not receive the higher grade when it was evaluated.

Our exclusive sourcing program combined with our 21 day minimum aging process is why we continue to deliver beef that is remarkably consistent all year round.
That's the Melotte Difference.
